PROCESS FOR PRODUCING NUCLEIC ACID-RICH YEAST EXTRACT AND NUCLEIC ACID-RICH YEAST EXTRACT

In a process for producing a yeast extract from a yeast cell suspension by adding an enzyme thereto, the pH value of the yeast cell suspension is adjusted to a neutral or alkaline level (6.5 to 11.0) and heated to a definite temperature (70 to 95 °C). Thus, a yeast extract with a high nucleic acid content can be produced.
