PROBLEM TO BE SOLVED: To obtain a liquid seasoning which can inhibit the germination and proliferation of sporophyte (heat-resistant sporangium) at the ordinary temperature, even when the sporophyte is contained or left in the liquid seasoning after thermally treated, and then packed in oxygen-permeable containers. SOLUTION: The liquid seasoning has a salt concentration of 1 to 4%(W/V), a pH value of 4.8 to 5.2, and an alcohol concentration of 0.1 to 1.5%(V/V). The liquid seasoning preferably also has a salt concentration of 1 to 4%(W/V), a pH value of 5.1 to 5.4, an alcohol concentration of 0.1 to 1.5%(V/V), and an acetic acid concentration of 10 to 80 mM. |
