<P>PROBLEM TO BE SOLVED: To provide a method of production for dry milk excellent in flavor, having flavor close to that of fresh milk, suppressing emission of cooked odor and suppressing production of 3-methylbutanol, furfural, butyric acid, caproic acid, dimethyl sulfone, etc., in spite of heat drying and pulverizing by spray drying. <P>SOLUTION: The method subjects the milk or pretreated milk (skimmed milk, formulated milk, concentrated milk, processed milk, etc.), to an electrolysis treatment and/or an electrifying process and then dries/pulverizes the processed liquid by spray drying, etc. <P>COPYRIGHT: (C)2003,JPO |
