<P>PROBLEM TO BE SOLVED: To effectively utilize wood chips used as a mushroom culture medium and simultaneously produce a konjak product free from a chlorinated lime odor. <P>SOLUTION: This method for coagulating a konjak bulb paste is characterized by mixing and coagulating the konjak bulb paste with the incinerated ash of wood chips used as the mushroom culture medium, especially the incinerated ash of deciduous tree chips used as a Grifola frondosa culture medium, and/or potassium carbonate as a coagulating agent.
