PURPOSE: A method of preparing functional rice containing red bean by coating a red bean solution on the surface of rice or impregnating rice germ with the solution is provided. Therefore, the rice has an improved taste and flavor when cooked and contains a red bean nutrient component beneficial to the human health. CONSTITUTION: A red bean is washed, 8kg of washed red bean is mildly heated with 40L of water for 5hr or more and then sifted. Thereafter, 10 ton of unpolished rice(1) is sprayed with 40L of red bean solution(2), the rice having a moisture content of 16 to 17% is milled and then dried to a moisture content of 14% or less. |
