<P>PROBLEM TO BE SOLVED: To provide a method and an apparatus each for vacuum concentration of scallop extract, by which extract comprising scallop broth is efficiently concentrated at a low cost without being blacken and causing quality deterioration due to overheat. <P>SOLUTION: The apparatus 10 for vacuum concentration of scallop extract has a scallop extract container 16 provided in a retort 14, and works as follows: pressure inside the retort 14 is reduced by a vacuum device 18 while low temperature steam is led into the scallop extract container 16 via a steam pipe 12, and the scallop extract stock solution is boiled under vacuum in the scallop extract container 16. <P>COPYRIGHT: (C)2003,JPO |
