<p>The dissolution state of malt collected in the course of barley germination is evaluated based on analytical data obtained by the electron spin resonance spectrometry by preliminarily determining the correlation between analytical data obtained with the use of common analytical methods including chemical analytical procedures and ESR signal strength determined by grinding the collected malt, measuring the spectrum height at g (i.e., the resonance position of unpaired electron originating in carbon radical) and determining the relative ratio of this spectrum height to the standard spectrum per unit weight of the collected malt. The analytical data involve Kolbach index, VZ45°C, enzyme power, β-glucan, viscosity and flyability.</p> |
