<P>PROBLEM TO BE SOLVED: To provide a yeast strain of which the glutathione synthase activity is attenuated and which produces γ-glutamylcysteine, to provide a method for simply screening the yeast strain, and to provide a food containing the γ- glutamylcysteine by utilizing the yeast strain. <P>SOLUTION: This method for screening the yeast strain of which the glutathione synthase activity is attenuated and which has γ-glutamylcysteine producing activity comprises the following steps (a) and (b): a step (a) for selecting yeast strains which have resistance to N-methyl-N'-nitro-N- nitrosoguanidine in a specified concentration range from a group of yeasts, and another step (b) for selecting the strain of which the glutathione synthase activity is attenuated and which has the γ-glutamylcysteine producing activity from the selected strains. <P>COPYRIGHT: (C)2003,JPO |
