<P>PROBLEM TO BE SOLVED: To provide a new method for producing D-fructose differing in fundamental principle from the conventional glucose isomerization method, comprising oxidative fermentation of D-sorbitol into D-fructose in nearly 100% yield using aerobic bacteria, especially acetic acid bacteria, through predicting the possibility of the oxidative fermentation using an enzyme not in accordance with the Bertrand-Hudson rule based on a study for the fundamental analysis of oxidative fermentation for many years. <P>SOLUTION: This method for producing D-fructose from D-sorbitol involves the oxidative fermentation utilizing FAD-SLDH (a specific sorbitol dehydrogenase). This new method is greatly superior to the conventional glucose isomerization method having many shortcomings in terms of D-fructose yield, production efficiency and production cost. <P>COPYRIGHT: (C)2003,JPO |
