PROBLEM TO BE SOLVED: To obtain a millet protein composition or a concentrate of the protein applicable to foods (including drinks) having preventing action on hyperlipidemia and/or arteriosclerosis, food additives, a preventive and/or therapeutic agent for hyperlipidemia. SOLUTION: This protein composition originating from millet is obtained by heating and gelatinizing after adding water to powdered millet, adjusting pH at 6, adding α-amylase and reacting, freeze-drying after centrifuging and collecting precipitates, removing fat from the freeze-dried product, washing and then air drying. The protein composition having a raising action on concentration of HDL-cholesterol in plasma and reducing action on arteriosclerotic index is provided. The protein composition may be a millet protein concentrate concentrated after extraction. |
