Fermentation system, especially for grape juice in the production of wine, is new. Fermentation system, especially for grape juice in the production of wine, has a lower primary and an upper secondary vat with a seal at the opening from the bottom of the secondary vat which can be moved vertically for opening and closing. The seal has a shaft (12) and a closure plate, together with a unit to wash the vat. The washing liquid is spread by a dynamic distributor (40) with rotating arms (42) under the plate with angled jets (44). The feed channel (38) for the washing liquid is within the shaft, leading to the rotating arms.
