The invention relates to a method and installation for producing artichoke bottoms. According to the invention, raw artichokes having a certain stem length are used. The inventive method consists in: (a) cooking the artichoke (9) at least partially by immersing same in water at a temperature of between 88 DEG C and 98 DEG C for between 5 and 15 mn; (b) the stem (90) is clasped in a grip element (21) such that it is immobilised; (c) the leaves (900) and the choke (901) are removed using a rotary cutting device (8), said cutting device having an axis of rotation that corresponds essentially to the axis (XX') of the stem (90) and being moved axially though the head (91) of the artichoke until it comes into contact with the underside (920) of the artichoke bottom (92); (d) the stem (90) is cut at the base of the artichoke bottom in order to separate same; (f) and said artichoke bottom (92) is recovered. The aforementioned technique can be used to obtain good quality, homogeneously-shaped artichoke bottoms with a low rejection rate. The invention is suitable for use in the agro-food industry.
