PURPOSE: Provided is a method of deionization and purification of sorbitol solution using electrodeionization system without using ion exchange resin, thereby preventing extravagant use of natural resources and wastewater generation and reducing operating cost. CONSTITUTION: The method comprises the steps of filtrating sorbitol solution using a micro-filter and activated carbon filter, and purifying the filtrate using an electrodeionization apparatus while supplying sorbitol solution to diluting rooms(7) and pure water purified by a water purifier to thickening chambers(8) and electrode chambers(9), thereby increasing ion removal rate and preventing scale formation.
