The present invention provides a process for crystallising oxonorleucinacetals (Ona) of the general formula (I). In particular, precipitation is performed from an aqueous medium with the addition of organic solvents which do not possess any free hydroxyl groups. This leads, after filtration etc., to a crystalline material with little residual moisture.
