The present invention relates to a method for coating foods with a durable and uniform coating, said foods selected from the group consisting of meat products stuffed into a casing and hard cheese said method consisting of treating the food with a water/ethanol solution containing shellac and a polyamide in the following proportions: a) from 1.0 to 99 percent by weight of shellac; and b) from 99 to 1.0 percent by weight of polyamide based on the total amount of shellac and polyamide, such that said meat product stuffed casing or hard cheese is coated with a composition containing from 1.0 to 99 percent by weight of shellac and from 99 to 1.0 percent by weight of polyamide based on the total amount of shellac and polyamide. |
