PROBLEM TO BE SOLVED: To provide bivalves that have each two shells naturally closed, can be stored for a long period of time and are cooked and to provide a method for producing the same. SOLUTION: The dried bivalves can open their shell covers, when they are put into hot water, and restore the shape and the taste to those while they are alive. Another dried bivalves are already boiled and readily eatable. Another dried bivalves are already boiled and seasoned and are readily eatable. The dried bivalves are produced through any steps including the followings: (first step) where the bivalves are boiled; (second step) where the boiled bivalves are seasoned, when necessary, the shells are tentatively closed and fixed; and (third step) where the bivalves having the closed shells are freeze-dried.
