PROBLEM TO BE SOLVED: To provide polyphenol salts, food products or beverages having high physiological activities with reduced acerbity, bitterness and astringency, and also to provide a method for reducing the acerbity, bitterness and astringency of polyphenols or extracts containing polyphenols. SOLUTION: Polyphenol salts including a sodium salt, calcium salt, magnesium salt and potassium salt, and food products containing the polyphenol salts are provided. Food products which contain the extract of a polyphenol- containing plant neutralized with sodium hydroxide, calcium hydroxide, magnesium hydroxide or potassium hydroxide are also provided. In addition, beverages obtained by neutralizing the polyphenol-containing extract with alkali compounds are also provided. |
