A new fat-free food product (I) in the form of a pellet which can be expanded in a microwave oven, contains ≥ 40 wt. % starch and 9-11.5 wt. % water, has a degree of gelatinisation of ≥ 75% and is packed in active packaging. Also claimed is a method (II) of preparing (I) comprising: (a) extruding the mixed ingredients with a water content of 29-35 wt. %, providing 50-400 kwh/t of mechanical energy and 10-150 kwh/t of heat; (b) cutting the resulting product into granules; (c) passing the granules through a second extruder to obtain pellets of the desired form; (d) pre-drying the pellets until they contain 20-25 wt. % water and then drying them until they contain 9-11.5 wt.%; and (e) packing the pellets in active packaging. Also claimed is an expanded food product (III) obtained by adapting the expansion time of (I) according to the size and power of the microwave oven.
