PROBLEM TO BE SOLVED: To provide a method for producing sprouted milled rice with embryo improved in palate feeling, appearance, digestibility and boiling property and wash-free before boiling. SOLUTION: This method for producing sprouted milled rice with embryo comprises removing by steaming attached water from the rice grain surface of sprouted brown rice obtained by adding water to brown rice to sprout embryo, polishing the rice grain surface with a grinding type and friction type rice milling machine while leaving the embryo to make sprouted milled rice with embryo, and then adding water at about 1-10 wt.% of the rice grain weight to the resultant product to soften the rice grain surface, stirring/mixing the resultant rice grains with a granular product granulated to a fixed grain size smaller than that of the rice grain and heated at >=60 deg.C, letting the granular product absorb rice bran remaining on the rice grain surface after being polished to remove and separating the rice grains from the granular product. |
