A process for industrially and efficiently producing fat compositions containing oleanolic acid, maslinic acid, physiologically acceptable salts thereof and derivatives of the same. This process involves the step of extracting olive plant and/or by−products obtained during the production of olive oil with an organic solvent optionally containing water.
