PROBLEM TO BE SOLVED: To obtain a plant belonging to the genus Raphanus containing anthocyanin in an increased level. SOLUTION: This plant belonging to the genus Raphanus contains a high level of anthocyanin in its edible buds and turnip, and provides a health- promoting effect thereby. In the plants of the genus Raphanus, anthocyanin exists by at least 100 nmol level per 1 g raw weight, and exhibits an absorption maximum at 515-550 nm range. The method for culturing the plants of the genus Raphanus as violet colored sprouts in both forms of an α-type sprout and a cotyledon plantlet (called as cress or micro vegetable) is provided. The method for producing anthocyanin is provided by culturing the plants of the genus Raphanus and isolating anthocyanin from them. |
