PROBLEM TO BE SOLVED: To enable excellent quality as good as that of the product obtained by using a strong flour of a foreign wheat to be provided by improving mechanical resistance, volume, texture or the like in the production of the bread using the flour of a domestic wheat. SOLUTION: A modifier for the production of the bread, containing a gluten, a water-soluble thickener, a hemicellulase, anα-amylase and vitamin C is added according to a process such as a straight process and a sponge process, and the production of various kinds of bread such as a hearth bread, a sandwich loaf, a butter roll, a soft French loaf and a croissant is carried out.
