PROBLEM TO BE SOLVED: To provide an apparatus for efficiently producing a sausage or the like, not requiring the change of initial setup such as the change and exchange of a chain for forming a link part even when the length of a filling part is different, and as a result, enabling labors and times for the change of the initial setup to be abridged. SOLUTION: This apparatus for producing the sausage or the like has a pump 1 for pressurizing and sending meat of a raw material, a nozzle 3 for filling the casing C with the meat of the raw material, chuks 5R and 5L for twisting a knotted part 4 of the casing C by rotatably operating the nozzle 3, a partitioning structure 6 for forming the knotted part 4 while regulating the length of the filled part which is filled with the meat of the raw material, and a sending structure 7 for sending and feeding the sausage chain fed from the partitioning structure 6. The partitioning structure 6 includes a pair of nipping bodies 30 arranged so as to face to each other by sandwiching the casing C, and a driving structure for intermittently and rotatably driving both the nipping bodies 30. As a result, the labor for changing the initial setup such as the change or the exchange of the chain can be omitted because the position for forming the knotted part 4 is freely changed by only changing the timing of rotative driving of the nipping bodies 30.
