Reconstitutable dehydrated potato comprises dried particles of cooked potato and 0.2 to 1.5 parts per hundred, by weight, of an edible, oxidation-resistant surfactant, e.g. a mono- or di-ester of a C12-C20 monocarboxylic saturated aliphatic acid with glycerine and/or other non-toxic polyhydric alcohol with no more than 6 carbon atoms e.g. propylene glycol, sorbitol; an alkylene oxide derivative of the said acid or ester; a mono-, di- or tri-ester of a C4-C12 sugar with a C12 to C saturated monocarboxylic fatty acid; the latter acids alone or their alkali metal salts. Preferred surfactants are glyceryl mono-palmitate, -laurate, or -stearate, sucrose dipalmitate, polyoxyethylene sorbitan tri-stearate and lecithin. The surfactant may incorporate fats, e.g. hydrogenated soybean or cottonseed oil, triglycerides of C12-C20 monocarboxylic acids, and/or a polyhydroxy compound such as propylene glycol and/or glycerine. Antioxidants e.g. butylated hydroxyanisole, propyl galleate &c., preservatives such as sodium sulphite &c. and non-fat-milk-solids agglomerated as described in Specification 753,600, e.g. 10-25 parts per hundred parts of dried potato, may also be incorporated, and the mixture, either molten or in solution, is sprayed on to a layer of the dried potato material carried on an endless belt, suitable apparatus for effecting this process being described. |
