PROBLEM TO BE SOLVED: To provide a food material containing trace minerals useful for maintenance and promotion of the health, and prevention of diseases, and further to provide a method for extracting the food material. SOLUTION: This method for producing an essence containing organic minerals comprises a step for adding a solution containing an organic acid to a material containing inorganic minerals, a step for heating the solution including the material to provide an extracted liquid, and a step for concentrating the resultant extract. Preferably, the method further includes a step for pretreating the material. The step for obtaining the extract comprises preheating the solution including the material, and carrying out the heat treatment of the material under a high pressure. Preferably, the material is a powder of fucus seaweed. Preferably, the mineral is selected from the group consisting of zinc, calcium, magnesium and potassium. |
