PURPOSE: A process for preparing a pork cutlet using unpopular pork parts is provided, thereby high quality pork cutlet having improved taste and plentiful nutrients can be prepared, and imbalance of pork consumption can be resolved. CONSTITUTION: The process for preparing a pork cutlet using unpopular pork parts comprises the steps of: mixing chopped pork with spice at 14deg. C or less for 15 minutes; mixing 54% of seasoned pork, 10% of water, 0.45% of salt, 0.05% of pepper, 1.4% of garlic, 0.3% of ginger, 1.1% of parsley, 2.2% of Welsh onion, 2.2% of carrot and 4% of whipping cream; kneading the pork mixture; covering the pork mixture with 2% of wheat flour, 6% of the white of an egg, and 16.3% of bread crumb, sequentially and press-molding the pork mixture; and freezing the pork mixture at -20deg. C for 24 hours, cutting and packaging it. |
