摘要 PURPOSE: A process of preparing the titled ascidian juice(Ureongshengi chot, Korean name) by using the intestines of ascidian having an effect on accelerating the aging by the action of protease present therein is provided, which increases the yield by 7% or more, does not need spices or other side materials during aging and shortens an aging time. CONSTITUTION: Ascidian containing intestines is soaked in a saline solution containing about 0.5% by weight of citric acid and about 3% by weight of salt for 1 to 10 min and mixed with about 10 to 15% by weight of table salt based on the weight of the ascidian and aged at ordinary temperature for 18 to 22 days in a state where ascidian meat is blocked from air.
