PROBLEM TO BE SOLVED: To obtain a treated material of carnosine having strengthened antioxidative ability enhancing power in a range of used amount of carnosine suitable for practical use in comparison with untreated carnosine, to provide a method for readily and stably producing the treated material of carnosine and a useful method for using the treated material of carnosine. SOLUTION: This antioxidative ability enhancer for foods comprises carnosine treated with acetic acid as an active ingredient obtained by adjusting 0.01-20% solution of carnosine to pH 3.5-4.0 using acetic acid, heating the solution to 85-95 deg.C, cooling the solution and adjusting the solution to pH >=8.0 or comprises carnosine treated with acetic acid, a flavonoid-based or polyphenol-based antioxidative component as active ingredients. This method for enhancing antioxidative ability of a food comprises adding the antioxidative ability enhancer to the food.
