PURPOSE: Provided is a manufacturing process of sweets using kimchi as a main ingredient, thereby providing snack which contains abundant edible fiber and gives good mouth feeling. CONSTITUTION: The manufacturing process of sweets using kimchi comprises the steps of: adding a gelation agent, a emulsifying agent and sugar or sugar syrup to water then heating them at 60-80deg.C; adding kimchi power thereto then mixing them; naturally drying the mixture and concentrating it; forming the concentrate into a plate type having a certain thickness; and vacuum-packing it.
