PROBLEM TO BE SOLVED: To provide a method for producing Ume flesh extract, solving the problem that fruit flesh, sourness and/or sugar content each of harvested Ume are (is) affected by weather all through the year, injury by continuous cropping in cultivating field crops, soil fertility of the farmland and/or the like since Ume used as a raw material for the Ume flesh extract is a farm product, the amount of active ingredient contained in the Ume flesh extract depends on the crop situation of the Ume, and as a result, it has been very difficult to bring high-quality Ume flesh extract containing much active ingredient on the market all through the year. SOLUTION: This method for producing Ume flesh extract comprises the following process: adding sugar and an organic acid causing monoester bond with sugar when heated to juice squeezed from unripe Ume, alternatively adding sugar, water and an organic acid causing monoester bond with sugar when heated, heating the mixture while stirring, boiling it down to obtain extract, so that umefural as an active ingredient, and a related compound comprising an organic acid and sugar can be ensured to be contained and increased. |
