PROBLEM TO BE SOLVED: To provide an apparatus and method for regulating the moisture content of a food capable of preventing the quality deterioration of the food by keeping the temperature of the food constant, to provide an apparatus and method for efficiently producing a sprouted food, and to provide an apparatus and method for efficiently producing a fermented food. SOLUTION: This apparatus for regulating the moisture content of a food comprises a moisture content adjusting house 30 for the food, a self-temperature control-type far-infrared heater 1 provided inside the house 30 for irradiating the food m with far-infrared radiation, and a food temperature rise-preventive device, i.e., a combination of an exhauster 50 and an exhaust level regulator 60, for suppressing the temperature rise of the food prior to finishing its moisture content adjustment; wherein the far- infrared heater 1 works as follows: far-infrared radiation 8-10 μm in radiation energy peak wavelengths is emitted by electric energization, the electrical resistance is increased as temperature rises, and on reaching an upper limit temperature, the electrical resistance becomes constant, thus the moisture content of the food is adjusted at 40-60 deg.C. |
