PROBLEM TO BE SOLVED: To obtain an antioxidant for a starch-containing food having more excellent antiretrogradation action than that of the conventional one and a starch-containing food containing the same. SOLUTION: This antioxidant for a starch-containing food comprises a polysaccharide which is composed of agarobiose as a basic unit and has 2,000-50,000 average molecular weight. This starch-containing food contains the antioxidant.
