PROBLEM TO BE SOLVED: To provide a drying method and apparatus capable of sufficiently reducing the volume of food waste without gelatinizing starch in drying food waste containing starch. SOLUTION: The food waste drying method includes a hydrolyzing process for hydrolyzing starch in food waste containing starch, a separation process for separating the mixture obtained in the hydrolyzing process into a solid and a liquid and a drying process for drying the solid. By this constitution, since the solid containing fibrous matter and water as main components is subjected to the drying process, food waste can be sufficiently reduced in volume without gelatinizing starch.
