PROBLEM TO BE SOLVED: To manufacture a high-purity plant sterol from a raw material derived from a plant by a simple operation. SOLUTION: By using a solvent consisting of a fraction of petroleum raw oil, that is, a volatile oil cut, a kerosene cut, a light oil cut or liquid paraffin, a plant sterol, cholesterol or the like is extracted. This process can extract only a sterol selectively and enables obtaining a product free from impurities and conforming to a high purity standard.
