The set of must-based wine making agents comprises strains of Saccharomyces cerevisiae, e.g. IVICAML1 synthesizing the killer toxin. Also claimed is a process utilizing the products. CLAIMED PROCESS - The process produces little volatile acidity in highly aromatic wines compared with the use of conventional yeasts. EMBODIMENT - The strains are extracted from Castilla - La Mancha flora, and consume all the sugars of the medium.
