SUBSTANCE: method involves placing sausage products in cooling chamber onto frame and cooling said products with dispersed air-and-water mixture comprising ice crystals. Apparatus has high-voltage unit. Negative potential is connected to air-distributing panel and negative potential is connected to frame comprising sausage products. Air-and-water mixture flow is passed through electrostatic field with the intensity of 30 kV/m. Charged mixture flow is directed to sausage products, with angle of attack being reduced to zero.
