PURPOSE: Provided is a nonthermal pasteurization method of an egg yolk protein by treating high voltage electric fields at protein denaturation temperature or less, thereby effectively eliminating bacteria without denaturation of proteins. CONSTITUTION: The nonthermal pasteurization method of an egg yolk protein is characterized by treating a liquid type or a powdery type of egg yolk protein with high voltage electric fields in an instant to inactivate general microorganisms and pathogenic microorganisms without protein denaturation, and consequently to extend its storage and improve its quality.
