PROBLEM TO BE SOLVED: To provide a roll-in oil composition which exerts a good workability at bakery dough preparation and yields a bakery dough which yields a highly raised baked product showing an excellent melt-in-the-mouth property. SOLUTION: In the roll-in oil composition, the total amount of a triglyceride of the formula: SXX (wherein S is a >=16C saturated fatty acid; and X is a >=16C unsaturated fatty acid in a trans form) (SXX) and a triglyceride of the formula: SXS (SXS) in an oil phase is from 6 to 60 wt.%, and the ratio SXX /(SXX+SXS) in the oil phase is >=0.5. |
