PROBLEM TO BE SOLVED: To provide a method for easily and efficiently producing a monoglyceride in high purity. SOLUTION: This method for producing a monoglyceride comprises the steps of carrying out a transesterification between a glycerol acetalized product and a raw material glyceride having as a constituent acyl groups each bearing at least one group selected from OH, ether group, aromatic ring, halogen atom, amido group, nitrile group, nitro group, thiol group and sulfido group to obtain a monoglyceride acetal-containing mixture, removing the unreacted glycerol acetalized product and glycerol from the mixture and then carrying out a deacetalization reaction through hydrolysis.
