PROBLEM TO BE SOLVED: To provide a method for obtaining a sucrose phosphorylase preparation and provide the sucrose phosphorylase preparation. SOLUTION: The method for obtaining a sucrose phosphorylase preparation includes the step wherein a solution including sucrose phosphorylase and sucrose is heated under the conditions under which he enzymatic reaction by the sucrose phosphorylase substantially does not occur. This invention also provides a sucrose phosphorylase preparation with a specific activity of >=30 U/mg.
