The invention relates to a manual apparatus and method for peeling flat, semi-concave and semi-convex vegetables. The inventive apparatus consists of mechanical devices comprising essentially a knife, a base, a set of gears, a mechanism for regulating the incision depth, a waste collector and a motor element. The invention is characterised in that a rotary tubular knife is used which, immediately after making a cut, collects the waste in the inside thereof and delivers said waste to a container via other internal sections of the apparatus. The motor unit can be separated from the cutting and waste units to facilitate cleaning. Given that no mechanised or semi-mechanised vegetable peeler of this type currently exists, the invention is used to mechanise and improve vegetable peeling in order to: facilitate the appropriate industrialisation thereof; noticeably improve hygiene conditions; shorten the peeling time; reduce the associated costs; improve the quality of the treated product; generate less waste; and enhance production performance. The manual apparatus comprises main parts that can be increased in number and adapted to form a unit that is used to produce a larger piece of apparatus.
