A meat pickling assembly has a fluid injection needle (10) whose open root is anchored in an elongated slot (14) adjacent to and a transverse aperture (18) within a base block (14). The belled needle root (16) esp. projects into the transverse aperture. The root transverse aperture is large enough to allow the needle to be inserted from within the root block. The longitudinal slot (14) within the base block has a U-shaped cross section, the base of which conforms the needle cross-sectional profile.
