PURPOSE: Provided is a method for storing red hot chili pepper to reduce production cost and to provide fresh red hot chili pepper to a consumer. CONSTITUTION: The method of storing red hot chili pepper comprises the steps of: preparing harvested red hot chili pepper; washing them; removing stalks therefrom; finely cutting the stalk removed red hot chili pepper; washing the cut pieces to remove seeds; drying them to their moisture content being 30-60 wt.%; quick-freezing them; and storing the quick-frozen red hot chili pepper at low temperature.
