PROBLEM TO BE SOLVED: To provide a fermentation processing method by which a material to be processed in a processing vessel is efficiently agitated to be fermented, and to provide an agitator used for the method. SOLUTION: The fermentation processing method is provided for fermenting the material to be processed in the processing vessel s1 by agitating the material to be processed in the processing vessel s1 by using the agitator 1 which runs in the processing vessel s1. The agitator 1 is moved forward or backward in the processing vessel s1, a rotor 21 provided in the agitator 1 is rotated in a normal rotation direction or a reverse rotation direction, and the material to be processed in the processing vessel s1 is agitated by an agitating member 211 provided on the circumferential surface of the rotor 21 to ferment the material to be processed.
