PROBLEM TO BE SOLVED: To solve a problem that an easily water-soluble dry brown alga having excellent dissolvability in mouth and an excellent chewable property, namely the dry brown alga capable of being easily taken as 'snack food' and having a preferable taste, can not be produced. SOLUTION: This method for producing the dry brown alga comprises bringing the brown alga represented by tangle or Undaria pinnatifida into contact with alkali ion water or the aqueous solution of an inorganic hydroxide or organic acid alkaline salt to soften the brown alga or once or more subjecting the brown alga to a process comprising a freezing treatment and a thawing treatment to soften the brown alga, and then drying the softened brown alga. The softened brown alga can be seasoned with a seasoning such as a saccharide or an alcohol. |
