PROBLEM TO BE SOLVED: To produce sausage with small number of workers and easy operation compared with conventional method and reduce the ratio of defective products. SOLUTION: Meat is stuffed into a casing, the stuffed casing is successively squeezed with intervals to successively form filled parts divided by the squeezed joint parts, the filled parts are separated by cutting the squeezed joint parts, the separated filled part is exposed to hot water of 50-80 deg.C for 1-3 min or to steam of 50-80 deg.C for 30 sec to 5 min and the product is smoked in a smoking oven. |
