Enhanced cell and protein yields are obtained by growing yeast, particularly Candida intermedia, on an n-alkane (C 12 to C 22 ) substrate in the presence of a liquid nutrient medium which is of the kind useful for producing a protein-containing foodstuff and which contains from 8000 to 10000 micrograms per litre of zinc in the form of a water-soluble non-toxic zinc salt e.g. zinc sulphate heptahydrate (preferred), zinc acetate, zinc acetyl-acetonate, zinc chloride, zinc citrate or zinc tartrate.
