PROBLEM TO BE SOLVED: To provide a high-concentration γ-aminobutyric acid-containing natural food material by efficiently producing γ-aminobutyric acid from a raw material containing glutamine. SOLUTION: This high-concentration γ-aminobutyric acid-containing natural food material is provided by bringing decarboxylase of glutamic acid and glutaminase into action with a raw material containing glutamine and producing the γ-aminobutyric acid from not only the glutamic acid included in the raw material but also the glutamine without adding a separately produced glutamic acid. Furthermore, the high-concentration γ-aminobutyric acid-containing natural food material is more efficiently and simply provided by bringing a microorganism having decarboxylase activity of glutamic acid into action therewith as the decarboxylase of glutamic acid with using a normal production process. |
