PROBLEM TO BE SOLVED: To provide a peroxide value measuring method having a collected fat and oil amount estimating function and a peroxide value determining function by one collected sample, and a peroxide value measuring instrument therefor. SOLUTION: In this peroxide value measuring method for editable oil or fat and oil-processed food, a crushed sample of the processed food is immersed into an organic solvent to dissolve fat and oil in the processed food, a prescribed volume is sampled from the fat and oil-dissolved organic solvent, a specific gravity of the sampled organic solvent is measured to be compared with a reference specific gravity value of the organic solvent, a sampled dissolved fat and oil weight is calculated based thereon, the specific-gravity-measured sampled organic solvent is coulometrically titrated by iodometry to find titration value, and the peroxide value in the sampled fat and oil is calculated based on the titration value and the dissolved fat and oil weight. A POV meter for executing the method is also provided.
