A slow drum halved lengthways has a mechanical, hydraulic or pneumatic lifter for one half for moving sideways. An exchangeable mixer arm inside rotates the opposite way to the drum, and the drum has a multiway valve for low pressure or atmospheric link-ups alternately. The vacuum accelerates protein migration from the centre to the outside of the ham improving consistency.
